What each ingredient does

Tomatoes
Provide the main body and acidic tomato flavour of the soup.
Sweet milk
Forms the creamy base of the soup and gives it a mild, rich body.
Baking soda
Neutralises some of the tomato acidity, softening the soup's sharpness.
Butter
Adds fat for a smoother mouthfeel and richer flavour.

The step that matters

Adding the tomato mixture to the milk. Hot, acidic tomatoes can curdle milk if combined carelessly. Baking soda helps buffer the acidity, and adding the tomato mixture to the milk, rather than the reverse, helps keep the soup smooth.

How well each one fits the dish's main ingredients (tomato, milk, butter, pepper):

  1. Capsicumfits better
