Ingredients

Directions

Make the base

  1. Scald the cream and mix it with the milk in equal parts.

  2. Sweeten and flavor the mixture to your taste.

Freeze, whip and finish

  1. When the mixture is partly frozen, add the chopped mixed nuts and preserved cherries.

  2. Chill the cream over ice until thoroughly cold.

  3. Whip the cream until frothy using an egg beater or whip churn.

  4. Strain the froth through a sieve.

  5. Return the strained froth to the bowl and whip again.

  6. If the cream becomes difficult to whip, add the egg white and continue beating.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Its milk fat traps air when whipped, creating the light, airy structure of the dish.
Milk
Thins the cream so the mixture is fluid and freezes to a softer, smoother texture.
Mixed nuts
Add crunchy texture and contrast to the soft, creamy frozen base.
Preserved cherries
Add sweetness, fruity flavor and moisture pockets throughout the frozen mixture.
Egg white
Its proteins help stabilize the whipped foam when the cream is hard to whip.

The step that matters

Chill the cream thoroughly before whipping. Cold cream whips into a firmer, more stable froth because the fat stays solid and holds air. Warm cream whips poorly and collapses easily, so the cream should be fully chilled first.

Swap the mixed nuts

How well each one fits the dish's main ingredients (cream, milk, sugar, egg):

  1. Almondfits better
  2. Pecansfits better
  3. Pistachiofits better
  4. Mixed nutsthe original

Fit is the average pairing score against cream, milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
