What each ingredient does

Oyster-plant or salsify roots
Provide the main body and the mild, oyster-like flavour of the soup.
Salt codfish or mackerel
Adds savoury, salty flavour to the cooking water that seasons the soup.
Milk
Makes the soup creamy and mellows its flavour.
Butter
Adds richness and a silky mouthfeel to the finished soup.

The step that matters

Place the roots in cold water. Cut oyster-plant or salsify discolours quickly when exposed to air, turning grey and dulling the soup. Holding the slices in cold water slows this browning until they are cooked.
