Stuffed Summer Squash

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Hollow out the center of the summer squash.

  2. In a bowl, mix bread crumbs, chopped celery, diced boiled ham, diced onion, and the squash you removed.

  3. Season the mixture with butter, coarse sea salt, and cayenne pepper to taste.

  4. Stuff the hollowed squash with the dressing.

  5. Bake in a 350°F (175°C) oven until the squash is tender.
