What each ingredient does

Cornmeal
Thickens the batter and gives the loaf its body as it cooks.
Eggs
Bind the mixture and set into a firm structure when heated.
Milk
Adds moisture and softness to the loaf.
Corn
Adds bulk, moisture and sweetness to the loaf.
Tomatoes
Add moisture and acidity that balance the sweetness of the corn.

The step that matters

Bake until set and golden brown. The eggs and cornmeal must cook through to firm the wet batter. Underbaking leaves the centre loose and gummy, while the golden colour comes from browning on the surface as it bakes.
