Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Form the bulk of the croquette and give a soft, moist interior.
Egg
Binds the mashed mixture so the croquettes hold their shape.
Bread crumbs
Form a crisp, golden outer coating when fried.
Flour
Thickens the sauce together with butter and stock.
Butter
Adds richness and fat to the sauce.

The step that matters

Fry the croquettes in deep lard until golden brown. The coating needs enough hot fat to brown and crisp quickly. If the lard is too cool, the croquettes absorb grease and turn soggy, while the interior may not heat through before the outside darkens.
