Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide the main substance, with whites chopped into the sauce and yolks pressed over the top.
Bread
Forms the base that holds the sauce and absorbs its moisture.
Flour
Thickens the milk into a smooth sauce when cooked together with butter.
Butter
Adds richness and flavour, and helps the flour form a smooth roux.
Milk
Forms the liquid base of the sauce, which thickens as it heats.

The step that matters

Keep the eggs just below boiling. Holding eggs at a gentle simmer below a full boil cooks the whites firm while keeping the yolks tender and less likely to turn grey or rubbery. Rapid boiling makes the whites tough and the yolks chalky.
