Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a bowl, beat the egg and mix in the milk, sugar, and salt.

  2. Add 1 cup of corn meal and enough additional corn meal to achieve a batter consistency.

  3. Stir in the melted butter and baking powder mixed with a little flour.

Bake

  1. Pour the batter into buttered pans and sprinkle sugar on top.

  2. Bake until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the batter and adds structure as it sets in the oven.
Corn meal
Provides the main body and grainy texture of the cornbread.
Milk
Adds moisture and hydrates the corn meal into a pourable batter.
Melted butter
Adds fat for tenderness and richness, and helps browning.
Baking powder
Releases gas in the batter, causing the cornbread to rise and become lighter.

The step that matters

Stir in the baking powder and add the batter to the pans promptly. Baking powder starts releasing gas once it is mixed with liquid, so the batter should go into the pans and the oven without long delay to keep the rise strong.
