What each ingredient does

Gelatin
Sets the mixture into a firm, sliceable structure as it cools.
Whipped cream
Adds lightness and a creamy texture by trapping air in the mixture.
Powdered sugar
Sweetens the mixture and dissolves easily into the strawberry juice.
Strawberries
Provide the main flavor and the juice that gives the charlotte its color and moisture.

The step that matters

Stirring the gelatin mixture until it thickens. Gelatin must be fully melted and then stirred while it cools so it thickens evenly. If it sets unevenly or is left to firm before folding in the cream, the texture becomes lumpy and the cream may deflate.
