Why it works: Beans and mustard match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 852 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beans

  1. Wash the beans and soak them overnight.

  2. In the morning, drain the water and cover the beans with boiling water.

  3. Add a pinch of baking soda and cook for 1 hour.

  4. Drain the beans well and place them in a baking pan with the salt pork.

Bake

  1. In a cup, mix the molasses, salt, and mustard, then fill with cold water.

  2. Pour this mixture over the beans.

  3. Bake in a preheated oven at 300°F (150°C) for 6 hours.

What each ingredient does

White beans
Provide the starchy body and bulk that make up the dish.
Salt pork
Adds fat and savoury flavour that seeps into the beans as they bake.
Molasses
Adds sweetness and a dark colour that deepens during slow baking.
Baking soda
Raises the cooking water's alkalinity, helping beans soften during cooking.

The step that matters

Bake the beans low and slow. Long, gentle baking at 300°F lets the beans absorb the sauce and turn creamy. Baking too hot can split the skins and dry the beans before they become tender.
