Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped beef, veal, and pork.

  3. Add the grated bread crumbs, grated onion, salt, pepper, and nutmeg. Mix well.

  4. Incorporate the eggs and form the mixture into a loaf shape.

  5. Place the loaf in a buttered pan and dot the top with small pieces of butter.

Bake and serve

  1. Bake for about 1.5 hours, basting occasionally with milk to create gravy.

  2. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef, veal, and pork
Form the meaty body of the loaf, giving it substance and savory flavor.
Eggs
Bind the meat and crumbs so the loaf holds its shape when sliced.
Grated bread crumbs
Absorb juices and keep the loaf tender and moist as it bakes.
Grated onion
Adds moisture and aromatic flavor that permeates the meat.
Milk
Basting with milk adds moisture and helps form a browned, gravy-like surface.

The step that matters

Forming and binding the loaf. Mixing the eggs in evenly and shaping the loaf firmly keeps it from crumbling. Overworking the meat, however, can make it dense and tough, so combine just until blended.

Swap the nutmeg
