Croutons, Genoese Fashion

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut rounds from stale bread for each person.

  2. Spread lightly with butter and brown in a 400°F (200°C) oven.

  3. Once cold, spread each round with anchovy paste.

  4. Place a heart leaf of lettuce on each round.

  5. Top each with a rounded teaspoon of egg salad.

  6. To make the egg salad, chop hard cooked eggs and mix with chopped olives, whole capers, and enough mayonnaise to hold it together.

  7. Garnish with a figure cut from pickled beet or finely chopped pickled beet.

  8. Serve as an appetizer.
