A Child's Birthday Cake

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. Cream the butter and brown sugar together.

  3. Add the egg yolks one at a time, beating well after each addition.

  4. Mix in the jelly, chocolate, and spices. Beat well.

  5. Add sour cream and coffee.

  6. Gradually mix in the flour and beaten egg whites.

  7. Sift the baking powder and baking soda with the flour.

  8. Fold in the floured fruit and nuts. Mix well with your hands.

Bake

  1. Line a large loaf pan with greased paper.

  2. Pour the batter into the pan.

  3. Bake for 3 to 4 hours until done.

What each ingredient does

Eggs
Egg yolks and whites add structure and richness, helping the heavy batter set as it bakes.
Butter
Creamed with sugar, it traps air and gives the cake a tender, rich crumb.
Brown sugar
Adds sweetness and moisture, and its molasses notes deepen the color and flavor.
All-purpose flour
Provides the structure that holds the heavy fruit and batter together as it sets.
Baking soda
Reacts with the acidic sour cream and molasses to produce gas that helps the cake rise.
Raisins
Add moisture, chewiness and concentrated sweetness throughout the cake.

The step that matters

Long, low bake. A dense, fruit-heavy batter cooks slowly; baking at a low 300°F for the full time lets the center set without the outside over-browning or drying out.
