Taffy Candy

Ingredients

Directions

Make the syrup

  1. Mix the sugar, vinegar, and cold water in a saucepan.

  2. Heat slowly, stirring occasionally, until the liquid is clear.

  3. Remove any sugar grains from the sides of the pan or spoon.

  4. Let it come to a boil without stirring.

Finish and pour

  1. When nearly done, add the piece of butter.

  2. Test by dropping a bit into cold water; it should be hard enough to pull but not brittle.

  3. Pour onto a buttered platter without using a spoon.

  4. Do not let the last syrup drip from the spoon to avoid graininess.

  5. Pour in the vanilla and sprinkle with a little baking powder.

Pull and cut

  1. When cool enough, pull until very white, then cut into small pieces.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the sweet base that cooks into a firm, chewy candy when boiled.
Vinegar
Adds acidity that helps keep the sugar from crystallizing into grains.
Butter
Adds fat that softens the candy and gives it a smoother, richer texture.
Baking powder
Lightens the candy by adding small gas bubbles as it is pulled.

The step that matters

Stop stirring once the syrup boils. Stirring after boiling starts sugar crystals that spread through the syrup and make the taffy grainy. Keeping the pan still and wiping stray grains from the sides helps the syrup stay smooth.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, vinegar, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, vinegar, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
