What each ingredient does

Coarse hominy
Provides the starchy corn base that softens and thickens into the dish's texture during soaking and cooking.

The step that matters

Soaking the coarse hominy. Soaking hydrates the dried corn kernels so they cook through evenly and soften; skipping or shortening it leaves the centers firm and the texture uneven.
