Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew the beef in water until tender.

  2. Remove the meat and add salt, pepper, and flour to the cooking water.

Assemble the pie

  1. Line a deep pie dish with the pie crust.

  2. Place the meat in the dish and pour some of the prepared gravy over it.

  3. Add small pieces of butter on top.

  4. Cover with more pie crust, making a gash in the center and decorating with strips of crust.

Bake and serve

  1. Bake at 400°F (200°C) until the crust is golden brown.

  2. Serve with gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat, which becomes tender through slow stewing.
Flour
Thickens the cooking liquid into a gravy.
Butter
Adds richness and moisture as it melts into the filling.
Pie crust
Forms a structure that encloses the filling and browns in the oven.

The step that matters

Bake until the crust is golden brown. The top and bottom crust must fully bake and brown so they set and stay crisp. Underbaked pastry absorbs juices from the filling and turns soggy.
