What each ingredient does

Cranberries
Provide the tart flavor and the pectin that lets the juice set into a jelly.
Sugar
Sweetens the tart juice and helps it set firm as it cooks down.

The step that matters

Boil until a drop held in the air congeals. Cooking the juice with sugar until it reaches the setting point is what makes it firm enough to hold its shape in molds. Stopping too early leaves it runny, and cooking too long can make it stiff.
