What each ingredient does

Eggs
Set the custard as they cook, giving it a firm, sliceable structure.
Milk
Provides the liquid base that the egg proteins set into a soft custard.

The step that matters

Cook until the custard thickens and is set. Gentle heat in a water bath lets the egg proteins set slowly. Too much heat curdles the eggs, leaving a grainy, watery texture instead of a smooth custard.
