What each ingredient does

Halibut
Forms the main body of the dish, giving it substance and a flaky texture when set.
Egg
Binds the fish mixture so it holds its shape when pressed and chilled.
Cream
Adds moisture and richness to the fish mixture, keeping it tender.
Cornstarch
Thickens the cheese sauce so it coats the fish smoothly.
American cheese
Melts into the sauce to give it body, richness and a savoury flavour.

The step that matters

Adding the egg to the cheese sauce. Egg proteins set when heated, so if the sauce is too hot or the egg is added carelessly it can scramble or curdle. Add it once the sauce is off the heat or barely warm, and stir steadily.

Swap the sage

How well each one fits the dish's main ingredients (cream, pepper, egg, cheese, sauce, butter, milk):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Sagethe original

Fit is the average pairing score against cream, pepper, egg, cheese, sauce, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
