Sweetbreads and Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Parboil the sweetbreads a day before using.

  2. Butter a baking dish and place the sweetbreads inside.

  3. Cover the sweetbreads with sweet cream.

  4. Bake in a 400°F (200°C) oven for a few minutes.

  5. Remove from the oven and prepare small slices of fresh tomatoes.

  6. Fry the tomato slices in butter and season with salt.

  7. Cut the sweetbreads into portions the size of the tomato slices before serving.
