Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites set firm to hold the yolk filling, and the yolks become the creamy stuffing.
Sardines
Add savory, salty flavor and richness to the yolk filling.
Butter
Adds richness and moisture to the mashed yolk filling.
Bread crumbs
Form a crisp, golden browned coating when fried.
Lemon juice
Adds acidity that brightens the rich sardine and yolk filling.

The step that matters

Fry the eggs in deep hot fat until golden brown. Fat that is not hot enough lets the breaded coating absorb oil and turn greasy before it crisps. Hot fat sets the crumb quickly into a crisp shell while the filling stays soft and warm inside.

Swap the mustard

How well each one fits the dish's main ingredients (egg, pepper, lemon, butter, bread, tomato, sauce):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Mustardthe original

Fit is the average pairing score against egg, pepper, lemon, butter, bread, tomato, sauce. Candidates are from the same food group and used in at least 100 recipes.
