Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise.
Almonds
Ground almonds provide the body and tender crumb in place of much of the flour.
Dates
Chopped dates add moisture and natural sweetness throughout the cake.
Granulated sugar
Sugar sweetens the batter and, beaten with the yolks, helps create a light texture.
Baking powder
Releases gas in the batter to give the cake lift as it bakes.

The step that matters

Folding in the beaten egg whites. Whites hold air that gives the cake its lift. Folding gently, rather than stirring, keeps that air from collapsing, so the cake rises and stays light.

Swap the dates

How well each one fits the dish's main ingredients (almond, egg, sugar, butter):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Datesthe original

Fit is the average pairing score against almond, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
