Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the eggs.

  2. Beat the yolks with the granulated sugar until very light.

  3. Beat the egg whites until stiff.

  4. Alternately add a teaspoon of egg whites and a teaspoon of ground almonds into the yolk and sugar mixture, stirring constantly.

Bake

  1. Butter a baking tin.

  2. Bake in a slow oven at 300°F (150°C) for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and set the crumb, while whipped whites trap air to lift the torte.
Granulated sugar
Sweetens the batter and helps the yolks become light and thick when beaten.
Almonds
Ground almonds add body, moisture and nutty flavour, giving a tender crumb without flour.

The step that matters

Folding the whites and almonds into the yolk mixture. Whipped egg whites hold air that makes the torte rise. Stirring too vigorously or for too long deflates the foam, leaving a dense, heavy result. Add the whites and almonds gently and alternately so the batter stays airy.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, butter):

  1. Almondthe original
