Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich milk
Provides the liquid base and richness for the soup.
Flaked wheat
Thickens the warm milk as its starch swells with heat.
Butter
Adds fat for richness and a smooth mouthfeel.
Egg whites
Whipped foam adds lightness and airiness to the soup.
Carrot
Adds natural sweetness and body to the vegetable base.
Cabbage
Supplies bulk and a mild vegetable flavour once softened.

The step that matters

Fold in the egg whites just before serving. Beaten egg white foam is unstable and collapses as it sits or gets hot. Folding it in at the last moment keeps the soup light and airy rather than flat.

Swap the cabbage

How well each one fits the dish's main ingredients (turnip, carrot, celery, onion, milk, wheat, butter):

  1. Leekfits better
  2. Parsnipfits better
  3. Potatofits better
  4. Cabbagethe original

Fit is the average pairing score against turnip, carrot, celery, onion, milk, wheat, butter. Candidates are from the same food group and used in at least 100 recipes.
