Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the loaf

  1. Cut an oblong slice from the upper side of the Vienna loaf and scoop out the crumbs.

  2. Spread the inside of the loaf with butter.

Fill and bake

  1. Fill the loaf with raw oysters.

  2. Add chopped parsley, cream, small bits of butter, pepper, salt, and Tabasco sauce.

  3. Replace the upper crust and place the loaf in a baking dish.

  4. Pour the oyster liquor over the loaf, cover, and bake at 400°F (200°C) for 20 minutes, basting often.

Serve

  1. Once done, place on an oblong dish, cut into slices, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vienna loaf
Forms a sturdy shell that holds the filling and soaks up the buttery cream.
Butter
Adds richness and moisture, and helps the inside of the loaf brown as it bakes.
Raw oysters
Supply the main flavor and tender filling that cooks in the baking loaf.
Cream
Adds moisture and richness, softening the bread and enriching the oyster juices.

The step that matters

Basting during baking. Basting keeps the loaf moist and spreads the oyster liquor and butter over the bread, so the crust softens and browns evenly while the oysters cook gently without drying out.

Swap the parsley

How well each one fits the dish's main ingredients (bread, butter, oyster, cream, pepper, sauce):

  1. Nutmegfits about as well
