Why it works: Chicken and potato are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,756 recipes. Both carry (z)-4-decenal, which smells green, must. The science ↓
Chicken Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the filling
Stew the chicken until tender, then remove it.
Add pepper, salt, cream, and flour to the gravy and bring to a boil.
In a baking dish, place the back of the chicken first, then the wings and other pieces, along with some small pieces of potato.
Pour some of the gravy over the chicken.
Top and bake
Roll out the baking powder biscuit dough to ½ inch thick and cover the chicken with it.
Add the rest of the chicken and cover again with dough.
Cut a slit in the middle of the dough and pour the remaining gravy through the slit.
Place on the stove, cover lightly, and boil for 10 minutes.
Remove the cover and bake in a 350°F (175°C) oven for 30 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken
- Provides the main protein and body of the pie, becoming tender as it is stewed.
- Cream
- Adds richness and a smooth, thick texture to the gravy.
- Flour
- Thickens the gravy so it coats the chicken rather than running off.
- Baking powder biscuit dough
- Forms a risen, tender crust that covers the filling and browns in the oven.
The step that matters
Pouring the gravy through the dough slit. The gravy must be hot and thick enough to flow without lumps. Flour thickens gravy only when it is fully heated, so a thin or cool gravy will leave the filling watery and under-set.
Swap the potato
How well each one fits the dish's main ingredients (chicken, pepper, cream, flour, biscuit):
- Arrowrootfits better
- Spinachfits better
- Okrafits about as well
- Potatothe original
Fit is the average pairing score against chicken, pepper, cream, flour, biscuit. Candidates are from the same food group and used in at least 100 recipes.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
