Ingredients
Directions
Sift and weigh the flour, then place it on a board or marble slab.
Sprinkle a little salt and sugar over the flour.
Beat the egg yolks and stir in a few spoonfuls of ice water.
Pour the egg mixture slowly into the center of the flour while working it with your fingers.
Continue to work the mixture until smooth and firm.
Work the butter until supple, ensuring it remains firm.
Divide the dough into three equal parts.
Spread one part of butter over half the dough, fold the other half over it, and roll it out.
Repeat the butter spreading and folding process for the second and third portions of butter.
After three turns, chill the dough for 10-15 minutes before each of the last three turns.
Turn the dough half round before each fold to ensure even rolling.
