Raspberry Cream

Ingredients

Directions

Prepare the raspberries

  1. Place 1 pint of raspberries in a bowl, add powdered sugar, and let stand for 1 hour.

  2. Pass the mixture through a fine sieve.

Make the gelatin base

  1. Soak gelatin in cold milk for 30 minutes, then add hot milk and granulated sugar, stirring until melted.

  2. Set aside to cool, then mix gelatin with the raspberry puree.

  3. Whip the cream and flavor it with vanilla, then gently combine with the raspberry mixture.

Set and serve

  1. Pour into a mold with a hollow center and refrigerate until set.

  2. Once stiff, unmold and fill the center with the remaining ½ pint of sweetened raspberries that have also stood for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberries
Provide the flavor and color, and their pulp gives the cream its body.
Gelatin
Sets the mixture so it holds its shape when unmolded.
Cream
Whipped to add lightness and a soft, creamy texture.
Milk
Dissolves the gelatin and adds richness to the set cream.

The step that matters

Gently combine the whipped cream with the raspberry mixture. Whipped cream holds air in a fragile foam. Folding gently keeps that air in, so the set cream stays light instead of dense.
