White Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat the egg whites until stiff peaks form.

  3. In another bowl, cream the butter and sugar together until light and fluffy.

  4. Add the sweet milk and mix well.

  5. Sift together the flour and baking powder, then gradually add to the butter mixture.

  6. Fold in the beaten egg whites gently until combined.

  7. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

Make the icing and finish

  1. For the icing, melt the grated chocolate with enough cold water to achieve the right consistency.

  2. Stir in the powdered sugar and vanilla extract until smooth.

  3. Once the cake is cool, frost it with the chocolate icing.

What each ingredient does

Egg whites
Whipped to stiff peaks, they give the cake its light, airy structure.
Flour
Forms the cake's main structure once it sets in the oven.
Butter
Creamed with sugar to trap air and add tenderness and richness.
Sugar
Sweetens the cake and helps create a soft, fine crumb when creamed with butter.
Baking powder
Releases gas in the batter, helping the cake rise.
Grated chocolate
Melted into the icing to give it chocolate flavor and body.

The step that matters

Folding in the beaten egg whites. Stirring too hard knocks out the air whipped into the egg whites, leaving a dense cake instead of a light one. Fold gently with a spatula until just combined.
