  2. Add the grated cheese, salt, mustard, and cayenne pepper.

  3. Stir in the beaten egg yolks.

  4. Gently fold in the beaten egg whites.

Bake and serve

  1. Transfer the mixture to a baking dish and dust with cracker crumbs.

  2. Bake at 350°F (175°C) until light brown.

What each ingredient does

Eggs
Whites are whipped to trap air, lifting the mixture as it bakes; yolks add richness and help it set.
Bread
Soaked in milk, it adds body and moisture, giving the fondue a soft, tender crumb.
Grated cheese
Melts and sets into the custard, providing flavor and a rich, savory texture.
Milk
Softens the bread and forms the liquid base that the eggs set into.

The step that matters

Gently fold in the beaten egg whites. Whites hold air only while whipped; vigorous stirring knocks it out, so folding gently keeps the mixture light and lets it rise in the oven.

Swap the mustard

How well each one fits the dish's main ingredients (bread, milk, cheese, pepper, egg):
