Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Junket tablet
Contains rennet, which causes the milk to coagulate into a soft, set custard.
Milk
Forms the body of the dessert, setting into a delicate curd when coagulated.
Sugar
Sweetens the milk and adds flavour to the set dessert.

The step that matters

Pour immediately after adding the junket. Rennet begins coagulating the milk as soon as it is mixed in, so delaying the pour can leave the dessert partly set in the mixing vessel, producing an uneven texture in the serving dishes.

Swap the nuts

How well each one fits the dish's main ingredients (junket, milk, sugar, vanilla, nutmeg):

  1. Almondfits better
  2. Chestnutfits better
  3. Pistachiofits better
  4. Nutsthe original

Fit is the average pairing score against junket, milk, sugar, vanilla, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
