Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the kidney beans, cottage cheese, ground peanuts, bread crumbs, boiled rice, chopped onion, fat, tomato juice, salt, and pepper until well combined.

  3. Form the mixture into a roll and place it on a baking sheet.

  4. Brush the roll with melted fat.

Bake and serve

  1. Bake for 25 minutes.

  2. Serve the loaf with a medium thick white sauce, adding 2 tablespoons of minced sweet red pepper if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cottage cheese
Provides moisture and soft, creamy body to the loaf's interior.
Kidney beans
Add bulk and a firm, starchy texture that holds the loaf together.
Bread crumbs
Absorb liquid and help bind the mixture so it holds its shape.
Ground peanuts
Add richness, fat and a nutty flavor to the loaf.
Boiled rice
Adds bulk and soft texture while absorbing moisture from the mixture.

The step that matters

Forming the roll. The mixture is soft and held together only by crumbs and cooked starches, so it must be packed firmly into an even roll. Loose packing can crumble or bake unevenly, while the binders set as the loaf heats.

Swap the kidney beans
