Cottage Cheese Omelette

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Beat the yolks and whites of the eggs separately.

  2. Mix the salt, milk, and cottage cheese with the pimentos into the yolks.

  3. Fold in the stiffly beaten egg whites.

Cook and serve

  1. Melt the fat in a hot frying pan and pour in the egg mixture.

  2. Cook slowly until the eggs set, then place in a 400°F (200°C) oven for a few moments to finish cooking.

  3. Fold the omelette in the center and garnish with parsley.

What each ingredient does

Eggs
Whipped whites give the omelette its light structure, and the yolks set to form the body.
Cottage cheese
Adds moisture and a soft, creamy texture to the set eggs.
Milk
Adds moisture and keeps the eggs tender as they cook.
Pimentos
Add mild sweetness and colour to the omelette.

The step that matters

Cook slowly until the eggs set. Eggs turn tough and dry when cooked over high heat. Gentle heat sets the proteins softly, so the omelette stays tender before the short oven finish.

Swap the parsley

How well each one fits the dish's main ingredients (egg, milk, cottage cheese):
