Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken neck, legs and wing tips
Provide meat, bone and connective tissue that give the broth body and flavour as they cook.
Flour
Dredging the chicken lightly coats the pieces, helping the broth thicken slightly and turn richer.
Cold water
Extracts flavour and gelatin from the bones as it heats slowly, forming the broth base.

The step that matters

Simmer slowly with the kettle covered. A gentle, covered simmer draws flavour and gelatin out of the bones while keeping the broth clear. A hard boil makes it cloudy and greasy.

Swap the parsley

How well each one fits the dish's main ingredients (flour, pepper, bread):

  3. Parsleythe original
  4. Nutmegfits about as well
