To Broil Fish

Ingredients

Directions

  1. Cut off the head and tail of small fish and split them down the back.

  2. Cut large fish into 1-inch strips.

  3. Thoroughly clean and dry the fish with a towel.

  4. Season oily fish with salt and pepper; use plenty of butter for dry fish.

  5. Grease the broiler well and place the fish inside.

  6. Broil for 5 to 20 minutes, depending on thickness.

  7. Remove the fish carefully to a platter without breaking.

  8. Spread with more butter and serve with tartar, tomato, or curry sauce.

  9. Garnish with slices of lemon.
