What each ingredient does

Cranberries
Provide the tart flavour and natural pectin that helps the jelly set.
Sugar
Sweetens the jelly and helps it set firm and clear.

The step that matters

Stirring the sugar until fully dissolved. Undissolved sugar can crystallise or leave a grainy texture in the finished jelly. Dissolving it fully before the final boil keeps the set smooth and even.
