Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Sift together the sugar, flour, and cream of tartar.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

Make the batter

  1. Gently fold the sifted dry ingredients into the beaten egg whites along with the flavoring.

  2. Pour the batter into an ungreased pan.

Bake

  1. Bake for 60 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff peaks, they trap air and provide the cake's light, airy structure.
Granulated sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
All-purpose flour
Adds light structure so the cake holds its shape as it sets in the oven.
Cream of tartar
Acidifies the egg whites, stabilising the foam so it holds its peaks longer.

The step that matters

Folding the dry ingredients into the egg whites. Stirring vigorously knocks air out of the whipped whites, which makes the cake dense and flat. Fold gently with a spatula so the foam keeps the air that gives the cake its rise.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
