Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift as the whipped foam sets in the oven.
Sugar
Sweetens the batter and helps the eggs hold a stable foam while beating.
All-purpose flour
Forms the light crumb structure that holds the sponge together.
Baking powder
Releases gas during baking so the sponge rises and stays tender.

The step that matters

Roll immediately. The sponge is hot and pliable only while fresh. Once it cools, it loses flexibility and cracks when rolled, so rolling right after it comes out of the oven prevents breakage.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, butter):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against egg, sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
