What each ingredient does

Rice
Forms the body of the dish as its starch softens and swells during cooking.
Milk
Adds moisture and richness as the rice slowly absorbs it during the long gentle cook.

The step that matters

Boil rapidly without stirring. Rapid boiling keeps the grains moving freely in the water so they cook evenly, while stirring would release surface starch and make the rice gummy.
