Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and helps the custard taste rounded.
Sweet milk
Forms the liquid base that sets into a soft, creamy custard when heated.
Nutmeg
Adds a warm, aromatic spice flavour.

The step that matters

Placing the cups in boiling water. The water bath surrounds the cup with gentle, even heat, so the custard sets smoothly instead of curdling or cooking unevenly at the edges. Water should reach nearly to the top of the cup.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits about as well
  4. Clovefits less well

Fit is the average pairing score against sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
