What each ingredient does

Gooseberries
Provide the fruit, pectin and tartness that give the jam its body and flavor.
Lump sugar
Sweetens the jam and, with boiling, helps it thicken and keep well.

The step that matters

Boiling the mixture. Boiling must be long enough to evaporate water and concentrate sugar and pectin so the jam sets. Stopping too early leaves a runny jam that may spoil sooner.
