Macaroni with Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Break up the macaroni and place it in a saucepan.

  2. Add boiling water and a little salt, then boil for 30 minutes, adding more water if necessary.

  3. Dissolve rice flour in a little cold water and thicken the macaroni.

  4. Cover and bake in a 350°F (175°C) oven for 30 minutes or longer.

  5. Heat the rich cream in another saucepan and mix it with the macaroni.

  6. Serve and flavor with a little pepper or finely chopped parsley.
