Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red cabbage
Forms the main bulk of the pickle and gives it its crisp texture.
Coarse sea salt
Draws water out of the cabbage, softening it and concentrating its flavour before pickling.
Boiling vinegar
Adds acidity that preserves the cabbage and gives the pickle its sharp taste.

The step that matters

Salting and resting the cabbage. Salt must be spread evenly through each layer so the cabbage releases enough liquid over 48 hours. Draining that liquid before adding the hot vinegar keeps the pickle from becoming watery.

Swap the ginger

How well each one fits the dish's main ingredients (cabbage, vinegar, pepper, clove, mustard):

  1. Allspicefits better
  2. Tarragonfits better
  3. Dillfits better
  4. Gingerthe original

Fit is the average pairing score against cabbage, vinegar, pepper, clove, mustard. Candidates are from the same food group and used in at least 100 recipes.
