Mashed Carrots

Ingredients

Directions

  1. Select young carrots and clean them without scraping.

  2. Cut the carrots into slices and boil in salted water until tender.

  3. Drain the carrots and mash them through a fine sieve.

  4. Return the mashed carrots to the heat and slowly evaporate the moisture.

  5. Finish with a chunk of butter and sweet cream, then season with salt and white pepper.

  6. Serve as you would mashed turnips or with boiled beef.
