Puree of Carrots

Ingredients

Directions

  1. Clean the young carrots without scraping and cut them into slices.

  2. Braise the carrots in butter with chopped shallots, celery, ham bone, and mixed spices.

  3. Add strong beef bouillon and bring to a boil, then reduce to a simmer until the carrots are soft.

  4. Remove the ham bone and thicken the mixture with flour and water or grated raw potatoes.

  5. Cook until the mixture becomes transparent.

  6. Pass through a puree strainer and season with coarse sea salt and white pepper.

  7. Serve with plain boiled barley on the side.
