Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green corn
Provides the main flavour and body of the soup, with sweetness from its kernels.
Butter
Adds richness and carries the aromatics' flavour during the gentle initial cooking.
Egg yolks
Thicken the soup and give it a smooth, rich texture when added off the heat.
Sweet cream
Adds richness and a silky mouthfeel to the finished soup.
Bechamel sauce
Adds body and creaminess, helping the soup feel thick and smooth.

The step that matters

Finish with egg yolks and cream. Egg yolks can curdle or scramble if they boil. Add them to the soup off the heat or at very low heat, stirring constantly, so they thicken it smoothly.

Swap the mace

How well each one fits the dish's main ingredients (corn, leek, parsley, butter, sauce, pepper, egg):

  1. Tarragonfits better
  2. Capersfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against corn, leek, parsley, butter, sauce, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
