Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Cut off the bitter end of the cucumbers and peel them.
Soak the cucumbers in cold salt water until crisp.
Insert a column tube into each end of the cucumbers and push out the center.
Fill the cavity with chicken or veal farce.
Stop up the ends with a portion of the cucumber heart.
Wrap each cucumber in oiled paper.
Arrange in a saucepan with white broth, cover, and braise at 300°F (150°C) for 40 minutes.
Glaze and serve as an entrée, or slice for garnishing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
