Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large open mushrooms
Form the main body of the dish and soften into a tender, juicy texture when broiled.
Olive oil
Carries heat and moisture across the mushroom surface, helping it brown and keeping it from drying out.
Lemon juice
Adds a bright acidity that balances the rich mushroom and oil flavour.
Buttered toast
Gives a crisp, rich base that soaks up the mushroom juices.

The step that matters

Broil the mushrooms over a hot fire. Mushrooms are mostly water. High direct heat drives off surface moisture so they brown and concentrate flavour instead of steaming in their own juice.

Swap the lemon

How well each one fits the dish's main ingredients (mushroom, pepper, olive):

  1. Lemonthe original
  2. Limefits about as well
  3. Avocadofits about as well
  4. Cherryfits about as well

Fit is the average pairing score against mushroom, pepper, olive. Candidates are from the same food group and used in at least 100 recipes.
