Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Mushrooms Plain Baked
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Break off the stems of the mushrooms, peel, and wash them in acidulated water.
Drain the mushrooms gill side down on a clean cloth.
Arrange the mushrooms gill side up in a shallow sauté pan and season with salt and pepper.
Place a small lump of butter in the center of each mushroom.
Bake in a slow oven at 300°F (150°C) for about 20 minutes, basting with drawn butter at intervals.
When done, arrange the mushrooms on fancy cut slices of toast.
Serve on a hot platter, garnished with a sprig of fried parsley.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
