What each ingredient does

Medium size mushrooms
Form the main body of the dish, softening and releasing moisture as they cook.
Shallots
Add a mild, sweet aromatic base that flavours the butter and mushrooms.
Butter
Carries flavour and browns lightly in the pan, adding richness to the mushrooms.
Veal gravy
Adds savoury depth and body to the mushrooms when simmered at the end.

The step that matters

Cook slowly until the mushrooms are tender. Mushrooms are mostly water. Cooking them gently lets that moisture release and evaporate, so they soften and concentrate in flavour instead of stewing or scorching in the pan.
